Healthy Chocolate Chip Cookies

Sometimes, the kids have behaved real well and you would like to reward them with some homemade chocolate chip cookies. Here's an easy and great tasting recipe which is also healthy too because it includes vanilla soy milk. The kids love the end result and you're smiling because you have snuck a healthy ingredient into their treat!

1 cup unsalted butter ( 2 sticks)
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup Vanilla Silk Soy Milk
1 teaspo0n vanilla
2 & a 1/4 cups unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
12 ounces semisweet chocolate chips

1. Preheat the oven to 350 degrees.
2. Cream butter and sugars until light and fluffy. Slowly add Vanilla Silk soy milk, cream well, then add vanilla.
3. Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chips.
4. Drop by tablespoons on parchment lined cookie sheet. Bake at 350 degrees for 10 minutes. Let sit on on cookie sheet for 5 minutes once removed from oven.
Then transfer to wire racks to completely cool.

To cream butter, just use an electric mixer.
